Gluten Free Baked Stuffed Shrimp



Nut Free Gluten Free 

You’ll be in shrimp heaven! This recipe can be prepared for a fraction of what it costs in a restaurant—and just try finding gluten free baked, stuffed anything on a menu!! You can use this stuffing with other fish & meats too!

Stuffing:
1 cup mushrooms, finely chopped
4 cloves garlic, minced
3 tablespoons onion, minced
2 tablespoons celery, minced
3 tablespoons fresh parsley, finely chopped
3 tablespoons butter or olive oil
2 teaspoon Old Bay seasoning (Check label for allergens!)
½ pound REAL crabmeat, chopped (or any seafood you like!)
½ cup gluten free chicken broth (Check label for allergens!)
32 gluten free crackers, crushed coarsely (We like Glutino round crackers)
12 (about 1.5 pounds) uncooked, shelled, butterflied (with tail left on) shrimp

Preheat oven to 375 degrees.

Heat butter or olive oil in large skillet on medium. Cook mushrooms, onion, celery, garlic and parsley, until softened, stirring occasionally. Add crabmeat and cook, stirring for another 3 minutes. Mix in chicken broth, cracker crumbs and Old Bay. Blend well and remove from heat.

Place shrimp in baking dish and top each with equal amounts of stuffing. Bake for 15 to 20 minutes or until shrimp is cooked through.

Makes 4-6 servings.
