Roast Chicken with Fresh Sage
Simple and delicious. Serve with roasted potatoes and vegetable.
8-9 sprigs of fresh sage (about 12 ounces), chopped well
10 cloves garlic, chopped
One 3-pound roasting chicken
Juice of one lemon
Salt and pepper, to season
Mix sage and garlic in a small bowl. Wash chicken, remove innards and stuff the sage/garlic mixture under the skin of the chicken.
Place chicken in a shallow baking dish. Squeeze lemon in body cavity and over the chicken. Season with salt and pepper. Bake at 375 degrees F for 1 hour and 15 minutes until golen brown and juices run clear when cut into thickest section of the chicken.
Serves 4.
